This can be done by going to your PS3 XMB (The turn on screen) and doing: Game>Game Data Utility>Call of Duty: Black Ops>Triangle>Delete. This deletes the installed data and patches as well as DLC I believe. It shouldn't affect your saves as long as you don't delete your saved data utility.
